Other nutrients, such as certain minerals—selenium, zinc, copper, and manganese, for example—are also part of the body’s antioxidant defense mechanisms, contributing to the function of enzymes that help protect cells from oxidative stress.
Food Preservation
It is essential to distinguish between nutrients with antioxidant properties and antioxidants used as processing aids. Both may be present in the same formulation, but they serve different purposes.
The former, as we have just explained, play a role in the body’s antioxidant defense mechanisms, while the latter help preserve food. Technological antioxidants are added to help maintain the characteristics of food products throughout their shelf life, since products containing fats are susceptible to oxidation, which affects the product’s stability and quality.
